Bell Peppers & Onions, Grilled - Atkins Recipe
Ingredients:
2 medium bell peppers, cut half, seeded 2 small onions, 1/2' thick slices 3 tbsp olive oil 1 tbsp balsamic vinegar 2 tbsp black olives, pitted, oil-cured, (such as nicoise 1 tbsp capers, drained salt and pepper
Instructions:
Grilling vegetables seems to bring out their flavor. In this recipe, peppers and onions are tossed with a tangy olive vinaigrette.
1. Prepare a medium grill. Cook vegetables 4 to 5 minutes per side until peppers are blistered and onions are nicely browned. Remove from grill; cool 5 minutes.
2. In a medium bowl mix olive oil, vinegar, olives and capers. Cut peppers into 1/2' strips and onions into 1/2' pieces. Add vegetables to bowl. Toss gently to combine ingredients. Season to taste with salt and pepper.
