Cabbage, Red, Swedish - Atkins Recipe




Ingredients:

1/2 stick unsalted butter
2 tart apples, peeled, cored, chopped
1 small onion, sliced thinly
2 lb red cabbage, shredded
2 packet sugar substitute
2 tbsp cider vinegar
1 tsp salt
1/4 tsp ground allspice
1/3 cup dry red wine
salt and pepper

Instructions:

Sweet and sour red cabbage pairs beautifully with wild game, goose, duck
and roasted red meats. It can be made up to three days ahead.

1. Melt butter in a large, heavy Dutch oven over medium-high heat. Add
chopped apples and onion. Cook 10 minutes, stirring occasionally, until
tender. Stir in cabbage and cook 8 minutes more, stirring frequently, until
slightly wilted. Stir in sugar substitute, cider, vinegar, salt and
allspice.

2. Cover and cook 10 minutes, stirring occasionally. Uncover, add wine.
Cook 10-15 minutes more, until very tender. Season to taste with salt and
pepper.
