Cauliflower W. Indian Spices - Atkins Recipe
Ingredients:
1 tbsp butter 1 tbsp canola oil 1 tsp ground cumin 1/2 tsp ground coriander 1/2 tsp ground ginger 1 small tomato, finely chopped 1 head cauliflower, separated into small flor salt and pepper
Instructions:
Cauliflower is one of Dr. Atkins' favorite vegetables because it's so versatile. Here, its mild flavor is perked up by aromatic spices.
1. In a large skillet, melt butter and oil over medium heat. Add cumin, coriander, and ginger. Cook spices until fragrant, about one minute.
2. Add tomato and cauliflower florets to skillet. Gently mix until cauliflower is evenly coated with spice mixture. Add 1/4 cup water. Cover; cook 20 minutes, until cauliflower is tender. Season to taste with salt and pepper.
