Chicken, Lemon, Atkins - Variation Recipe
Ingredients:
1/2 stick butter 12 chicken legs garlic powder oregano salt pepper 1 lemon, juice of
Instructions:
The original recipe called for 1 chicken quartered, specific amounts of seasoning and 2 lemons, but we find in our house it works better as listed above.
In a large baking dish (large enough to hold all the chicken), melt the butter on top of the stove. Place chicken legs in and season with salt, pepper, garlic powder, and oregano. Flip chicken and reseason. Bake in 400 degree oven for 30 minutes (top will be golden brown.) Flip, and cook about 10 more minutes. Then turn down the oven to 300, squeeze juice of lemon over the chicken, and cook until tender. The meat will practically fall off the bone.

I made atkin's lemon chicken last night, and it was delish, but I made a few minor changes to the recipe, and here they are. Hubby gave this a 2 thumbs up.
