Chicken Burgers Mexicali - Atkins Recipe










Ingredients:

2 lb ground chicken
1 cup Atkins bread crumbs
3 large scallion, chopped
2 clove (3 g) garlic, pushed through a press
1 large egg, beaten
3 tbsp fresh cilantro, chopped ; divided
1 tbsp ground cumin
1 tsp salt
1/2 tsp chili powder
1 cup green salsa
1 medium avocado, peeled, pitted, cubed
2 tbsp vegetable oil

Instructions:

A south-of-the-border spin makes these burgers extra tasty.

1. Combine chicken, bread crumbs, green onions, garlic, egg, 1 tbs of the
cilantro, cumin, salt and chili powder in a bowl. Mix well and shape into
four 1'-thick patties. Place on a plate, cover and refrigerate 1 hour.

2. Meanwhile, mix salsa, avocado and remaining cilantro in a bowl and set
aside.

3. Heat oil in a large skillet over medium-low heat and cook burgers 7
minutes on each side, until browned and cooked through. Serve with salsa
mixture.
