Chicken Salad - Atkins Recipe
Ingredients:
1 lb chicken breast, poached 1 stalk celery, chopped 3 tbsp mayonnaise 1 tsp dijon mustard 1 tbsp fresh parsley, chopped
Instructions:
Simple and delicious. For a spicier version, add 1/2 tsp finely chopped chipotle en adobo.
1. Cut chicken into 1/2 cubes. Mix celery, mayonnaise, mustard, and parsley in a bowl. Add chicken; toss to coat.
