Chicken Salad, Deli Delhi - Atkins Recipe










Ingredients:

8 oz chicken breast, from the deli counter
1 tbsp mayonnaise
1 tbsp sour cream
1 tsp curry powder
1/2 tsp ground ginger
1/2 packet sugar substitute
1/2 small apple, chopped
1/2 stalk celery, chopped
2 tbsp chopped walnuts
4 slice atkins bread
2 leaf bibb lettuce

Instructions:

For a change of pace and texture, try this exotic chicken salad. If you are
on induction or ongoing wait loss, omit the apple.

1. Dice chicken breast into 1/3' cubes. In a bowl mix mayonnaise, sour
cream, curry powder, ginger and sugar substitute until smooth. Add chicken,
apple, celery and walnuts. Mix until combined.

2. Divide salad on 2 bread slices; top with lettuce. Cover with remaining
bread slices.
