Chicken Thighs, Sauteed - Atkins Recipe






Ingredients:

2 tbsp butter, divided
1 tbsp olive oil
2 lb chicken thighs, bnls, sknls
1/2 small onion, finely chopped
2 clove garlic, pushed through a press
1/2 cup reduced sodium chicken broth
1 tbsp balsamic vinegar, &1
1/2 tsp dried oregano or marjoram
2 tbsp chopped fresh parsley

Instructions:

An easy weeknight entrée. Serve with cauliflower puree and a green salad
for a homey, comforting meal.

&1 or red wine vinegar mixed with 1/4 pkt sugar substutute

1. In a large skillet, melt 1 tbs butter together with olive oil. Brown
chicken in batches. Transfer to a bowl.

2. Melt remaining tbs of butter. Add onion to skillet; cook 5 minutes,
until softened. Stir in garlic; cook 1 minute more. Add stock, vinegar, and
oregano. Return chicken and accumulated juices to skillet. Cover and
simmer 20 minutes until chicken is cooked through. Sprinkle with parsley
before serving.
