Chutney, Rhubarb - Atkins Recipe
Ingredients:
4 cup fresh rhubarb (~1.5lb), 1/2in pieces 1/2 cup red onion, chopped 1/4 cup cider vinegar 1 tbsp fresh ginger, minced 4 clove (3 g) garlic, pushed through a press 10 packet sugar substitute 3/4 tsp ground cumin 1/2 tsp ground cinnamon 1/2 tsp allspice 1/4 tsp red pepper flakes
Instructions:
Rhubarb is a low carb spring vegetable that tastes like a fruit. Tart and colorful, this chutney is a perfect accompaniment to roasted or grilled meats.
1. Combine all ingredients in a large saucepan; mix well. Cook over medium-high heat until rhubarb is tender and mixture thickens slightly, about 10 minutes. Cool completely.
