Coleslaw, Asian-Style - Atkins Recipe




Ingredients:

4 cup bok choy, thinly sliced
1 large carrot, peeled
1 cup snow peas, string, thinly slice leng
2 tbsp vegetable oil
1 tbsp asian sesame oil
2 tbsp rice wine vinegar
1 tbsp soy sauce
2 tsp gingerroot, minced
1/2 packet sugar substitute
salt

Instructions:

Bok choy, also known as Chinese cabbage, can be found in most supermarkets.
In this recipe, it is combined with snow peas and carrot and tossed with
an Asian vinaigrette.

1. Place cabbage in a large bowl; grate carrot into cabbage. Mix in snow
peas.

2. In a small bowl, mix oils, vinegar, soy sauce, ginger and sugar
substitute. Pour dressing over salad; toss to coat. Season to taste with
salt.
