Coleslaw, Classic - Atkins Recipe




Ingredients:

1 each medium cabbage, halved, cored
2 carrots, (Not 4 induction)
3/4 cup mayonnaise
1/2 cup sour cream
2 tbsp cider vinegar
2 packet sugar substitute
1 tsp celery seed
1 tsp salt

Instructions:

Unlike store-bought slaws, ours contains no sugar.

1. Cut cabbage halves in half and thinly slice. Transfer to a large bowl.
Coarsely grate carrots into cabbage and mix well.

2. In a small bowl, whisk together mayonnaise, sour cream, cider vinegar,
sugar substitute, celery, and salt. Pour dressing over vegetables. Mix
until thoroughly combined. Refrigerate at least 30 minutes before serving
for flavors to blend.

Prep time: 15 minutes

Chill time: 30 minutes
