Cookies, Chocolate Peanut Butter - Atkins Recipe




Ingredients:

3/4 cup Atkins bake mix
1 tbsp cocoa powder
1 1/2 tsp baking powder
12 packet sugar substitute
1/3 cup peanut butter, unsweetened
1/2 cup heavy cream
2 egg, beaten
1 tsp vanilla extract

Instructions:

A favorite flavor combo in a low carb cookie.

1. Heat oven to 375ºF. Whisk dry ingredients in a bowl. Mix peanut butter,
cream, egg and vanilla extract until smooth. Add to bake mix mixture; stir
until blended.

2. Drop dough by tablespoonfuls onto greased baking sheets. Smooth dough
with fingertips and press cookies with the back of a fork to flatten. Bake
8-10 minutes, until browned. Cool on sheets 1 minute before transferring to
wire racks to cool completely.

Bake/Cook time: 10 minutes
