Cornbread, Surprise - Atkins Recipe
Ingredients:
1 cup water 3/4 cup canola oil 3 large egg 1 package quick & ez corn muffin & bread mix 1 cup yellow squash, grated
Instructions:
The addition of a cup of grated yellow squash is the 'surprise' ingredient. It adds nutrients and moistness.
1. Heat oven to 350º F. Grease a 9x 5 loaf pan. In a bowl combine water, oil and eggs. Add the mix and beat with a mixer on low for 1 minute, until well blended. Scrape down sides of bowl and mix 1 more minute. Add the squash and mix with a spatula until well combined.
2. Pour into prepared pan. Bake 50-55 minutes until skewer inserted in center comes out clean. Cool in pan on wire rack 15 minutes. Turn out onto wire rack and cool completely.
