Cucumber, Mango And Black Bean Salad Recipe




Ingredients:

1 seedless cucumber, washed, and
cut into 1/2" dice
1/2 medium mango, cut 1/3" dice
1/2 cup drained and rinsed black beans
2 tbsp fresh lime juice
2 tbsp orange juice
1 tbsp finely-chopped fresh cilantro
3/4 tsp salt
1 jalapeño pepper, seeded, and
finely chopped

Instructions:

In a large bowl, toss all ingredients. Let stand 10 mintues for flavors to
blend.

This recipe yields 4 servings.
