Fish, Salsa, 1-2-5 - Atkins Recipe




Ingredients:

1 tbsp olive oil
4 filet (6 oz) fish, bnls, sknls

SNAPPER/GROUPER/SEA BASS

1 cup spicy green salsa
1 cup monterey jack cheese, shredded (4 oz)
1/2 cup pumpkorn, chili flavored, or toasted pumpkin seeds

Instructions:

Why 1-2-5? Because this dish couldn't be faster.

1. Heat oven to 400º F. Spread olive oil in a shallow baking pan. Arrange
filets in a single layer. Spoon salsa over fish.

2. Bake fish 8 minutes. Spread cheese evenly over top. Bake 2-3 minutes
more, until cheese is bubbly. Sprinkle with Pumpkorn before serving.
