Gazpacho, White - Atkins Recipe










Ingredients:

3 slice Atkins sliced bread, crusts removed
1/4 cup blanched almonds
1 small green pepper, seeded, coarsely chopped
1 English cucumber, peeled,1/2' slices, or
2 small regular cucumbers, seeded
2 medium scallion, coarsely chopped,

ENDS THINLY SLICED AND


RESERVED FOR GARNISH

2 tbsp white vinegar
1/2 tsp Tabasco sauce
1/2 packet sugar substitute
1/4 cup extra-virgin olive oil
4 cup ice water
salt and pepper

Instructions:

Gazpacho originally contained no tomatoes and is a good way to turn
less-than-fresh bread into a refreshing cold soup.

1. Place bread in a bowl; cover with water and soak 5 minutes, until
softened. Squeeze excess water from bread and place bread in a food
processor or blender. Add almonds, pepper, cucumber and medium scallion,
process in pulses until fairly smooth.

2. Add vinegar, Tabasco, sugar substitute and olive oil. Process until
smooth. Slowly add ice water; process in pulses until smooth. Pour into a
pitcher or bowl. Season to taste with salt and pepper. Chill 1 hour for
flavors to blend.
