Green Beans, Lemon-Basil - Atkins Recipe




Ingredients:

1 lb green beans
1 tbsp butter
1 1/2 tsp lemon peel, freshly grated
1/4 tsp salt
1/8 tsp pepper
1/4 cup fresh basil, slice thin

Instructions:

The beauty of summer cooking is combining a few fresh ingredients at their
peak of flavor. This simple recipe is big on taste.

1. Bring a large pot of lightly salted water to a boil. Cook green beans 5
to 6 minutes until barely tender. Drain into a collander.

2. In the same pot over medium heat, melt the butter. Add green beans,
lemon zest, salt and pepper; stir to coat. Remove from heat. Toss with
basil and serve immediately.
