Kabobs, Beef, Chili - Atkins Recipe










Ingredients:

2 tbsp canola oil
2 clove garlic, pushed through a press
1 tbsp chili powder
dash ground red pepper
2 lb bnls beef top sirloin, 1-inch pieces
8 scallion, 2-inch pieces
2 tbsp fresh parsley, chopped

Instructions:

Grilling brings out the best flavor in these tender cubes of beef. Instead
of onions, we used scallions, which are lower in carbs, in our kabobs.

1. Combine oil, garlic, chili powder and red pepper in a bowl. Add beef and
green onions; toss to coat. Let marinate 20 minutes.

2. Prepare a medium heat grill. On eight 12-inch metal skewers, alternately
thread beef and green onion pieces. Grill kebabs 10 to 12 minutes, turning
occasionally, for medium-rare to medium doneness. Season to taste with
salt; sprinkle with parsley.
