Kebabs, Veggie - Atkins Recipe










Ingredients:

3 tbsp olive oil
1 tsp dried thyme
1/2 tsp salt
1/2 tsp pepper
2 medium zucchini, scrubbed, 2in pieces
2 red bell peppers, seed, 2in pieces
18 large white mushrooms, washed, stemmed

Instructions:

A colorful medley of vegetables, lightly coated with olive oil and thyme,
makes a great accompaniment to just about any grilled main course.

1. Combine oil, thyme, salt, and pepper in a very large bowl or 2 gallon
resealable bag.

2. Add vegetables, toss to coat. Marinate 30 minutes. Thread vegetables on
6 metal skewers. Grill over medium heat 15 minutes, turning occasionally,
until vegetables are crisp-tender and have grill marks.
Prep time: 10 minutes

Marinate time: 30 minutes

Bake/Cook time: 15 minutes

Carbohydrates: 6.3 grams

Net Carbs: 4.2 grams
