Leeks Under Cheese - Atkins Recipe
Ingredients:
1 tbsp butter 1 tbsp canola oil 4 each leeks, trim, clean, 3' pieces 1/2 cup chicken broth, reduced sodium, or water 1/4 tsp pepper 1/3 cup Gruyere cheese, shredded 1/3 cup Parmesan cheese, grated
Instructions:
Cheese and leeks are a natural pairing. If you don't have an ovenproof skillet, transfer leeks to a shallow baking dish.
1. In an ovenproof skillet, melt butter and oil over medium-high heat. Add leeks and cook 5 minutes until they begin to 'sweat' (release liquid). Add broth, salt, and pepper. Cover and continue cooking 15 minutes until leeks are tender. Uncover and boil off liquid in the skillet.
2. Heat broiler. Sprinkle leeks evenly with cheese. Broil 3 to 4 minutes, 5 from heat source, until browned.
