Meatloaf, Turkey W.Pesto & Spinach - Atkins Recipe
Ingredients:
1 lb ground turkey 1 package frozen spinach, thawed 1/2 cup atkins bread crumbs 1 large egg, beaten 3 tbsp prepared pesto 1/4 cup cream 1 clove garlic, pushed through a press 1 tsp dried oregano 1/2 tsp salt 1/4 tsp pepper
Instructions:
For a delicious twist on the traditional meatloaf, try this turkey version. Prepared pesto and oregano add lots of flavor.
1. Heat oven to 375°F. In a large bowl, combine turkey and spinach until well blended. Mix in remaining ingredients.
2. Transfer mixture to a loaf pan. Bake 45-50 minutes, until an instant read thermometer inserted in center registers 160°F. Cool 5 minutes before cutting into slices.
