Muffins, Pumpkin Cranberry - Atkins Recipe




Ingredients:

1 cup Atkins bake mix
1/2 cup walnuts, very finely ground
2 tsp ground cinnamon
2 tsp baking powder
1 cup granular sugar substitute
1 cup pumpkin puree
2 large egg
1/2 cup canola oil
1/2 cup fresh cranberries, chopped

Instructions:

If you can't find fresh or frozen cranberries, simply leave them out or
substitute with 1/2 chopped apple.

1. Heat oven to 350°F. Grease 2 six compartment muffin tins. In a large
bowl, whisk bake mix, walnuts, cinnamon and baking powder. In a medium
bowl, whisk sugar substitute, pumpkin puree, eggs and vegetable oil until
well blended.

2. Add pumpkin mixture to bake mix mixture; stir just until moistened. Fold
in cranberries. Divide batter in muffin tins.

3. Bake 35 minutes, until a toothpick inserted in centers comes out clean.
Cool in tins 5 minutes; turn onto wire rack to cool completely.

Prep time: 20 minutes

Bake/Cook time: 35 minutes
