Instructions:

This versatile mix is known in classic French cooking as duxelles. In
addition to being a great-tasting side dish, its an excellent addition to
soups, omelets, and stews.

1. In a large skillet, melt butter in oil over medium-high heat. Add
shallots and sauté 3 minutes, until softened. Add mushrooms and cook 10
minutes, until mushrooms release their juices.

2. Add wine, thyme, marjoram, salt and pepper. Reduce heat to low; continue
cooking 15 minutes, until mushroom mixture is almost dry. Stir in parsley.

Prep time: 15 minutes

Bake/Cook time: 30 minutes
