Pancakes, Pumpkin Spice - Atkins Recipe










Ingredients:

1/2 cup Atkins bake mix
3 packet sugar substitute
1/2 tsp baking powder
1/2 tsp pumpkin pie spice/ground cinnamon
1/4 tsp salt
1/2 cup pumpkin puree
1/2 cup milk
2 large egg, beaten
2 tbsp butter, melted

Instructions:

Pumpkin puree gives these pancakes a beautiful color. They are delicious
served with Atkins Sugar Free Pancake Syrup.

1. Whisk bake mix, sugar substitute, baking powder, pumpkin pie spice and
salt.

2. In a bowl whisk puree, milk, eggs, and butter until smooth. Add to dry
ingredients; mix until smooth. Let batter rest 5 minutes.

3. Heat a large nonstick skillet over medium heat; lightly coat with
vegetable oil. Use 2 tbs batter per pancake. Cook until small bubbles
appear at edges; flip and cook 30 - 45 seconds more.

Prep time: 20 minutes

Bake/Cook time: 1 minute
