Pasta Salad W.Tuna, Capers & Lemon - Atkins Recipe




Ingredients:

3 cup controlled carbohydrate pasta, fusilli shape
1/3 cup extra-virgin olive oil
2 can tuna in oil, lightly drained, flaked
1/2 red onion, finely diced
1/4 cup fresh parsley, chopped
3 tbsp capers, with brine
2 tbsp fresh lemon juice
1 tsp lemon rind, grated
salt and pepper

Instructions:

Peppery capers and the bright flavor of fresh lemon balance the mildness of
pasta and give zip to canned tuna.

1. Cook pasta in lightly salted boiling water until tender. Drain; transfer
to a large bowl.

2. Mix in olive oil until pasta is coated. Add tuna, onion, parsley, capers
and their brine, lemon juice and lemon rind. Toss gently. Season to taste
with salt and pepper. Serve warm or chilled.

Prep time: 5 minutes

Bake/Cook time: 15 minutes
