Pasta With Broccolini And Tomato-Cream Sauce Recipe










Ingredients:

3 cup controlled carbohydrate pasta
1 bunch broccolini, cut 2" pieces
= (or 1/2 bunch broccoli)
1 tbsp olive oil
1/4 red onion, finely chopped
1 tbsp tomato paste
1 1/4 cup heavy cream
4 oz smoked provolone or mozzarella chee, diced
2 oz prosciutto di Parma or baked ham, cut thin strips

Instructions:

Prepare pasta according to package directions. During the last 5 minutes
of cooking time, add broccolini. Drain and transfer to a large bowl.

While pasta is cooking, prepare sauce. Heat oil in a medium saucepot over
medium heat. Cook onion 5 minutes, until softened. Add tomato paste;
cook, stirring 2 minutes more. Add cream to saucepot; cook 5 minutes,
until thickened.

Toss pasta and broccolini with cheese cubes and prosciutto strips. Divide
on 4 plates; top with sauce.

This recipe yields 4 servings.
