Pasta With Fresh Tomatoes, Lemon And Feta Recipe
Ingredients:
3 medium tomatoes - (abt 18 oz), cut 1/2" dice 1 small red onion, chopped 1 tbsp lemon zest 1/2 tsp salt 1/2 tsp freshly-ground black pepper 8 oz Atkins Pasta Cuts fettuccine or pen 1 cup crumbled feta cheese
Instructions:
In a medium bowl, combine tomatoes, onions, zest, salt and pepper. Let sit at room temperature at least 30 minutes.
Cook pasta according to package directions. Drain and toss with tomato mixture. Sprinkle with feta. Serve hot or at room temperature.
This recipe yields 4 servings.
