Penne, Sausage & Peppers Over - Atkins Recipe
Ingredients:
1 tbsp olive oil 12 oz cooked sausage, 1/4' thick slices 2 onions, thinly sliced 2 bell peppers (any color), seeded, 2' by 1/4' strips 8 oz atkins penne pasta cuts 1/2 tsp salt 1/4 tsp pepper
Instructions:
If using uncooked sausage, prick it well all over, place it in a skillet with 1/4 cup of water and simmer 5 minutes, until cooked through.
1. In a large skillet heat oil over medium-low heat. Add sausage and cook 5 minutes, until browned. With a slotted spoon, transfer sausage to a bowl.
2. Add onions to skillet; cook 5 minutes, until lightly golden. Add peppers and cook 12 minutes, or until tender. Meanwhile, cook pasta according to package directions. Drain and keep warm.
3. Add 1/2 cup water, salt, pepper and reserved sausage to skillet. Stir well; toss pepper mixture with pasta.
