Pesto, Mint-Walnut - Atkins Recipe
Ingredients:
1/3 cup walnuts 4 clove garlic 3 cup fresh mint leaves 1/2 cup olive oil 1 tbsp red wine/balsamic vinegar
Instructions:
A change of pace from pine nuts and basil. This pesto goes especially well with grilled chicken.
1. Finely chop walnuts and garlic in processor. Add mint leaves and chop finely. Add oil and vinegar and blend until pesto is smooth.
Like most pestos, this can be made ahead and frozen for up to 3 months.
