Pico De Gallo - Atkins Recipe
Ingredients:
1 medium avocado, chopped 1 medium tomato, chopped 3 green onions, chopped 1 jalepeno pepper, finely chopped 2 tbsp chopped fresh cilantro 1 tbsp fresh lemon juice 1 tbsp canola oil or other vegetable oil salt and pepper
Instructions:
Many variations of this typical Mexican salsa exist. To reduce the carbs further, either omit the tomato or the avocado.
Look for pebbly skinned Haas avocados: their flavor is richer and their texture creamier.
1. In a small bowl, combine all ingredients. Add salt and pepper to taste. Refrigerate 1 hour for flavors to blend.
