Queso Fresco, Marinated - Atkins Recipe
Ingredients:
1/2 cup extra-virgin olive oil 1 tsp fresh thyme, minced 1 clove garlic, pushed through a press 1/4 tsp crushed red pepper 1/4 tsp sweet paprika 1 lb queso fresco, 3/4' dice

Queso fresco, which means 'fresh cheese' in Spanish, is similar to mozzarella in flavor but has a firmer texture. Several brands are now available in the dairy section of most supermarkets. This recipe can be made ahead and stored in the refrigerator for three days.
1. In a large, shallow dish, combine all ingredients except cheese.
2. Add cheese and toss to coat. Let stand, covered, at room temperature 2 hours before serving.
