Raspberry Mousse Recipe
Ingredients:
1 qt cold heavy cream 1/2 cup Atkins Sugar-Free Raspberry Syrup 8 scoops Atkins Vanilla Shake mix 12 packets sugar substitute Fresh raspberries or strawberries, for garnish
Instructions:
Combine all ingredients (except berries) in a large bowl. Gently whisk until well mixed and dry ingredients are dissolved. Continue whisking until firm, but not stiff. (Mixture thickens quickly: do not over-whisk).
Cover and chill at least 2 hours or overnight. Spoon into dessert bowls and garnish with a few berries.
This recipe yields 8 servings.
