Rolls, Original Atkins Recipe
Ingredients:
4 large egg, at room temperature 1/4 cup ricotta cheese 1/4 tsp cream of tartar parmesan cheese, grated
Instructions:
Set oven to 300. Separate CAREFULLY your eggs. Beat your whites until stiff peaks form, add cream of tartar, keep beating till really stiff. Mix yolks, and cheeses together, add a little of your white to the yolk mixture. Slowly fold in your yolk mixture, trying not to break the whites down, streaky is okay.
Pour in 6 globs on a greasy cookie sheet or in a greased muffin top pan. Bake for 35-40 minutes.
You can also grate/shred these rolls to use as bread crumbs.
