Salad, Chicken, Summer - Atkins Recipe
Ingredients:
4 tbsp sesame oil 3 tbsp rice-wine vinegar 1/2 tsp salt 1/2 packet sugar substitute 4 cup bok choy (Chinese cabbage), thinly sliced 1 lb chicken breast, cooked, shredded 4 medium scallion, thinly sliced 1 carrot, grated 1/4 cup fresh cilantro, chopped 1/4 cup peanuts, roasted, chopped
Instructions:
Sesame oil and a splash of rice-wine vinegar plus lots of veggies make this mayo-less chicken salad a great warm- weather alternative to more traditional versions. All the ingredients in this salad can be found in most supermarkets.
1. In a large bowl, mix sesame oil, vinegar, salt and sugar substitute. Add bok choy, chicken, medium scallion and carrot. Toss gently to combine ingredients.
2. Divide on four plates. Top each with a sprinkling of cilantro and peanuts.
