Salad, Cobb - Atkins Recipe
Ingredients:
3 cup romaine lettuce (~1/3 head), chopped 3 cup iceberg lettuce (~1/3 head), chopped 1 lb cooked chicken/turkey breast, diced 8 slice bacon, cooked, crumbled 1 tomato, seeded, diced 4 medium scallion, white & 1in green, chopped 1/4 cup red wine vinegar 1 tsp dijon mustard 1/2 packet sugar substitute 1/2 cup olive oil 1 large avocado, peeled, sliced 3/4 cuproquefort cheese, crumbled (~6 oz) 1 large egg, hard boiled, very finely chopped
Instructions:
This is the basic recipe, you may improvise with any low carb veggies you have on hand: chopped mushrooms, diced zucchini, sliced celery while not traditional are delicious additions.
1. In a large bowl, mix Romaine and iceberg lettuces, chicken, bacon, tomato, and medium scallion.
2. In a small bowl, whisk vinegar, mustard, and sugar substitute until combined. Slowly whisk in olive oil. Pour 3/4 of the dressing over salad and mix well. Divide salad on 4 plates.
3. Sprinkle cheese and chopped eggs over salads. Arrange avocado slices on top; drizzle with remaining dressing.
Avocados, though a fruit, are allowed on Induction in moderation (see Special Category Foods under Induction).
