Ingredients:

1 English cucumber, peeled, thinly sliced
3 medium scallion, thinly sliced
1 tbsp rice wine vinegar
2 tsp soy sauce
1 tsp sesame oil
1/4 packet sugar substitute

Instructions:

This light, refreshing salad is a perfect accompaniment to grilled or
roasted meats. Try to purchase English, a.k.a., seedless cucumbers, instead
of regular ones. Though not actually seedless, the seeds are smaller and
the flesh firmer.

1. Combine all ingredients in a large bowl; toss until combined.
