Salad, Cucumber, Mango & Black Bean - Atkins Recipe




Ingredients:

1 seedless cucumber, washed, 1/2' dice
1/2 medium mango, 1/3' dice
1/2 cup black beans, drained, rinsed
2 tbsp fresh lime juice
2 tbsp orange juice
1 tbsp fresh cilantro, finely chopped
3/4 tsp salt
1 pepper jalapeño, seeded, finely chopped

Instructions:

Mangoes and black beans are high in nutrient-dense carbs and fiber, so we
added cucumber to reduce the overall carb count. This salad would make a
great accompaniment to any grilled food.

1. In a large bowl, toss all ingredients. Let stand 10 mintues for flavors
to blend.

Marinate time: 10 minutes

Carbohydrates: 12.5 grams Net Carbs: 9.5 grams Fiber: 3 grams

Protein: 2.5 grams
