Salad, Lobster, Asian - Atkins Recipe
Ingredients:
SALAD
3/4 lb lobster meat, cooked 2 cup chinese cabbage, thinly sliced 1/2 red pepper, thinly sliced 4 medium scallion, thinly sliced 1 tbsp sesame seeds, toasted
DRESSING
2 tbsp rice wine vinegar 2 tbsp soy sauce 1 tbsp vegetable oil 1 tsp sesame oil 1 tsp gingerroot, grated 1/2 packet sugar substitute
Instructions:
Asian seasoning brings out the delicate flavor of fresh seafood. The salad base of Chinese cabbage has a celery-like crunchiness.
1. Cut lobster meat into 1' pieces. Mix with cabbage, pepper, scallions, and sesame seeds.
2. In a small bowl, whisk together vinegar, soy sauce, vegetable and sesame oil, ginger, and sugar substitute. Pour dressing over salad. Toss gently to coat.
