Salad, Macaroni & Cauliflower - Atkins Recipe




Ingredients:

1 1/2 cup controlled-carb pasta elbows
2 cup cauliflower, broken into small florets
1/2 cup mayonnaise
2 tbsp Dijon mustard
1 packet sugar substitute
1/3 cup celery, chop
1/4 cup dill pickle, chop
1/4 cup green olives, pimiento-filled, sliced
salt and pepper

Instructions:

Mixing pasta and cauliflower gives this traditional summer dish a fresher
flavor and more interesting texture.

1. Prepare pasta according to package directions. During the last 8 minutes
of cooking time, add cauliflower florets. When pasta and cauliflower are
tender, drain into a colander and rinse under cold water.

2. In a large serving bowl, mix mayonnaise, mustard and sugar substitute.
Add celery, pickle and olives. Fold in pasta and cauliflower. Mix gently
until all ingredients are combined. Season to taste with salt and pepper.

Prep time: 20 minutes

Bake/Cook time: 25 minutes
