Salad, Pea & Bean - Atkins Recipe




Ingredients:

1/3 lb snow peas, trimmed, strings removed
1/3 lb green beans, 2' pieces
2 tbsp olive oil
1 tbsp white wine vinegar
1/2 tsp salt
1/4 packet sugar substitute
1/2 tsp dried tarragon

Instructions:

Peas and beans while doing Atkins? Yes, if you know which ones to choose!
This quick side-dish salad may be served hot, warm, or cold.

1. Cook green beans in a large pot of lightly salted water 3 to 4 minutes,
until crisp-tender. Add snow peas during the last minute of cooking time.
Drain and return to pot.

2. Mix in oil, vinegar, salt, sugar substitute and tarragon. Toss to coat
vegetables evenly.

Bake/Cook time: 20 minutes

Carbohydrates: 4.5 grams

Net Carbs: 4 grams

Fiber: 0.5 grams

Protein: 0.5 grams

Fat: 7 grams

Calories: 80
