Salad, Sesame Asparagus - Atkins Recipe




Ingredients:

2 lb asparagus, trimmed
2 tbsp soy sauce
1 tbsp rice wine vinegar
2 tsp sesame oil
1/2 packet sugar substitute
2 tbsp sesame seeds, toasted

Instructions:

Keep soy sauce, rice wine vinegar and sesame oil in your pantry, and you
can dress up any vegetable Asian-style.

1. Place asparagus in a large saucepan of lightly salted boiling water.
Simmer 6-8 minutes until just tender. Do not overcook (stalks should not
droop when picked up). Drain and pat dry. Cut into 1 1/2' pieces.

2. In a large bowl, mix soy sauce, vinegar, sesame oil, sugar substitute
and sesame seeds. Add asparagus and toss to coat. Chill 30 minutes for
flavors to blend.

Prep time: 10 minutes

Bake/Cook time: 6 minutes

Chill time: 30 minutes
