Salad, Shrimp, Curried - Atkins Recipe
Ingredients:
1/3 cup mayonnaise 1 tbsp lemon juice 2 tsp curry powder 1 1/4 lb cooked medium shrimp, 1/2 pieces 1/2 jicama (~1 cup), peel, dice 1/3' cubes salt and pepper
Instructions:
Crunchy jicama and spicy curry powder dress up simple shrimp salad. If you cant find jicama, you may substitute celery.
1. In a large bowl, mix mayonnaise, lemon juice, and curry powder until smooth. Add shrimp and jicama; toss to coat evenly with dressing. Season to taste with salt and pepper.
