Salad, Snow Pea, Pepper & Cabbage - Atkins Recipe
Ingredients:
2 tbsp olive oil 1 1/2 tbsp rice wine vinegar 1 tsp salt 1/2 packet sugar substitute 1/2 lb snow peas 3 cup green cabbage (~1/2 lb), shredded 1 red bell pepper, slice thin 3 medium scallion, slice thin 1/4 cup fresh mint, chop
Instructions:
This refreshing, beautifully multicolored salad looks like a spring bouquet. Snow peas and mint are two of the seasons brightest flavors.
1. Mix olive oil, vinegar, salt and sugar substitute in a small bowl. Place snow peas with enough water to cover in a microwave-safe bowl. Cover with plastic wrap; microwave on high one minute. Drain and slice in thirds lengthwise.
2. Mix snow peas, cabbage, pepper, onion and mint in a large bowl. Add dressing; toss to coat. Chill 15 minutes to blend flavors.==
