Salad, Tri-Color - Atkins Recipe




Ingredients:


DRESSING

3 tbsp olive oil
1 tbsp balsamic vinegar, or
1 tbsp red wine vinegar, mixed with
1/2 packet sugar substitute
1/2 tsp lemon juice
1/2 tsp salt
1/4 tsp pepper

SALAD

1 head endive, thinly sliced, diagonal
1/2 head radicchio, bite-sized pieces
1/2 head bibb lettuce, bite-sized pieces

Instructions:

This pretty salad is a great side dish. To make it a main course, add
sliced chicken or another form of protein.

1. In a salad bowl, whisk together olive oil, balsamic vinegar, lemon
juice, salt and pepper.

2. Add endive, radicchio, and lettuce. Toss to coat with dressing.
