Salmon, Roasted W.Macadamia-Cilantro Crust - Atkins Recipe




Ingredients:

3 tbsp unsalted butter, divided
1/4 cup macadamia nuts, coarsely chopped
1 filet (2.5 lb) full salmon filet, &1
1 tbsp fresh lime juice
2 tbsp fresh cilantro, chopped

Instructions:

&1: skin on, pin bones removed (see tip)

This delicious, easy entrée is a classic example of quality ingredients
equaling more than the sum of their parts. And it couldnt be healthier:
salmon is loaded with heart-healthy omega 3s and macadamia nuts are high in
monounsaturated fats.

1. Heat oven to 450°F. Melt 2 tbs butter in a small saucepan; add nuts and
cook 2-3 minutes until nuts start to color. Remove from heat.

2. Melt remaining tbs of butter, and pour into a 9' x 13' roasting pan.
Place salmon in roasting pan, flesh side up. Sprinkle with salt and pepper.
Pour nut mixture over fish. Roast 10-15 minutes, for medium. Transfer to a
serving platter. Drizzle with lime juice and sprinkle with cilantro.

To remove pin bones embedded in the salmon, use tweezers

Bake/Cook time: 20 minutes
