Salmon Filets W.Creamy Wasabi Sauce - Atkins Recipe




Ingredients:

1 large shallot
1 cup water
3 tbsp soy sauce
4 filet (07 oz) salmon filets, 3in wide, ctr-cut
1/3 cup mayonnaise
3 tbsp wasabi sauce w/ginger, (such as gold's)
flat leaf parsley sprigs, for garnish, if desired

Instructions:

Poaching in a slow oven is the best way to produce evenly cooked fish. The
cooking time given in this recipe yields a slightly rosy center. (For a
completely opaque fish, increase the cooking time to 18 minutes and the
standing time to 3 minutes.) Wasabi sauce is available in the Asian section
of most supermarkets.

1. Heat oven to 325° F. Finely chop enough of the shallot to equal 1 tsp
and slice the rest. Combine the sliced shallot, water and soy sauce in a 9'
deepdish pie plate or 2-quart baking dish. Add filets skin side up. Bake
15 minutes.

2. Meanwhile, whisk mayonnaise with wasabi sauce.

3. Remove fish from oven and let stand 3 to 5 minutes. Measure 2 tbs of the
cooking liquid and whisk into mayonnaise mixture. Peel skin from fish.
Turn right side up on plates and drizzle dressing over fish. Garnish with
parsley sprigs, if desired.
