Sandwich, New Blt - Atkins Recipe
Ingredients:
8 slice hickory smoked bacon, nitrite-free 2 tbsp mayonnaise 1 tsp dijon mustard 1 tsp atkins sugar free pancake syrup 4 slice atkins rye bread, toasted 1 cup arugula leaves, rinsed, dried 1 plum tomato, ripe, thinly sliced
Instructions:
Sometimes, even an old favorite can do with an upgrade.
1. Cook bacon in a large nonstick skillet until just crisp. Drain on paper towels.
2. Mix mayonnaise, mustard and syrup. Spread on bread slices.
3. Layer arugula, bacon, and tomato on 2 slices of bread. Top with remaining bread slices.
