Sandwich, Reuben - Atkins Recipe
Ingredients:
8 slice atkins rye bread 2 tbsp butter, softened 1/2 cup coleslaw 12 slice corned beef 4 slice jarlsburg cheese 2 tbsp russian salad dressing
Instructions:
Substitute sauerkraut for coleslaw and French for Russian dressing as you desire.
1. Butter each slice of bread.
2. For each sandwich: On unbuttered side of bread spread 2 tbs coleslaw, 3 slices corned beef, 1 slice cheese and 1 1/2 tsp dressing. Place second slice of bread, butter side up, on dressing. Repeat to make total of 4 sandwiches.
3. On griddle, cook sandwiches, tented with foil, 6 minutes, turning once, until toasted golden. Serve hot.
