Sandwich, Tortillas, Olive-Egg Salad - Atkins Recipe
Ingredients:
6 large hard-cooked egg, finely chopped/grated 1/4 cup mayonnaise 2 tbsp extra-virgin olive oil 2 tbsp black olives, chopped 1 tbsp sun-dried tomatoes in oil, drained, choppped 1/8 tsp red pepper flakes salt and pepper 8 tortilla la tortilla factory garlic & herb 1 cup arugula leaves
Instructions:
Wrap an-out-of-the-ordinary egg salad in a garlic tortilla, and youve got a tasty meal in 10 minutes flat. Its a good idea to keep hard-cooked eggs in the fridge- as meal builders or high protein, low-carb snacks.
1. Mix eggs, mayonnaise, olive oil, black olives, sun-dried tomatoes and red-pepper flakes. Season to taste with salt and pepper.
2. Warm tortillas between damp paper towels in microwave. Spread egg mixture on tortillas, leaving a 1/2 border. Top with arugula leaves. Roll up tortillas.
