Sauce, Chimichurri - Atkins Recipe
Ingredients:
1 cup flat-leaf parsley leaves 6 clove garlic, peeled 2 pepper jalapeño chiles, seeded 5 tbsp extra-virgin or pure olive oil 3 tbsp red-wine vinegar 1 tsp kosher salt 1/4 tsp old bay seasoning
Instructions:
This chunky sauce of garlic, parsley and jalapeños is an easy and zesty way to dress up plain meats, poultry and fish. The sauce may be kept, covered, in the refrigerator up to four days. Be sure to buy Italian flat-leaf parsley for this dish; it has more flavor than the curly kind.
1. In a mini-food processor, combine parsley, garlic and jalapeños; process until a chunky paste forms. Alternatively;finely chop together parsley, garlic and jalapeños on a cutting board.
2. Stir into oil, vinegar, salt and seasoning.
